A great all-rounder cake that everyone will enjoy, the ground almonds give it a heavier, dense texture (in a good way!) while the chocolate provides a delicious moist interior. You can also make this cake gluten free by substituting the flour for additional almond meal. For optimum taste, it’s important that you use good-quality coffee and chocolate.

Bread and butter puddingsBread and butter pudding is a great way to use leftover bread that has gone stale. What makes a bread pudding great is that it just requires your basic ingredients, flavouring and some left over fruit. It has the wonderful flavour of bread soaked in vanilla and cinnamon flavoured milk, along with chunks of any kind of fruit you like. Instead of a large, individual baking tin, using a muffin tray allows for easy portioning for a quick snack.

Slow-cooked lamb with garlic, lemon and oregano

I cooked this dish for this year’sSlow cooked lamb Mother’s Day family lunch. We’re currently limited to how many people can sit around the dining table so I served the lamb and grilled onion in gourmet rolls with a side salad so that it could all be eaten with ease. It was delicious if I do say so myself.
